Bluenana Ice Cream
Yum, yum, yum!!! I was listening to a podcast by Dr. Michael Greger on the health benefits of blueberries when I decided to make some blueberry ice cream. Since I have decided to "Switch 4 Good" I needed to be creative. Below is a quick and easy recipe that required only 4 ingredients to make a healthy Bluenana Ice Cream. WARNING: it is very moreish!
Ingredients
2 medium size frozen bananas
1 cup blueberries
1/2 cup Oat Milk (or other plant based milk; one of my favorites is Elmhurst Oat Milk)
2 tablespoons maple syrup (optional. If your bananas are ripe and sweet you will not need this)
Instructions
Place all ingredients in a blender or food processor
Blend until smooth and creamy
Enjoy!!
I was lazy the day I made this and used the XProject 5:1 Hand Blender rather than pulling out my VitaMix.
