Homemade 100% Whole Wheat Bread
I have not been as diligent as I would like to be with my blog. I have so many posts in DRAFT mode that I have not had time to complete. My goal in 2020 is to commit to at least two blog posts a month. I have plenty of content, I just need to commit the time to write.
I did not spend as much time last year talking about my plant-based nutrition plan. This will be the second year I compete as a plant-based athlete and hope to share a little more about my prep throughout the year. One thing I learned last year is that my prior competition prep "carbophobia" was so misplaced.
I was meal prepping on Saturday and also cooking for date night and decided to try this bread recipe from Sweet Simple Vegan. I am a big fan of theirs and have been testing out a few of their recipes. I did make a few changes to the recipe you will find on their blog: 1) I substituted 2 T of applesauce for the oil, 2) I did not add the Vital Wheat Gluten, 3) I only cooked for 18 min (this may be my convection oven but the bread cooked quickly) and 4) I topped the loaves with some oatmeal and flax meal. As you can see from the photos below the bread was light and fluffy with a nice brown, crispy crust. I don't have a full sized bread pan so I divided the recipe into three small bread pan loaves. This was I was able to send one home with Mr. K and to freeze one for the future.
